@Musicman oh gosh i LOVE it; one restaurant in town here does similar, though it's their own potato casserole underneath with the eggs, gravy etc on top🥰🥰🥰

I had some sour cream left over and added it to my scrambled egg while cooking. It cane out with a lovely fluffy texture and tasted great.
