If you don't cook it right, it's kind of slimy and chewy. My great grandma is from the South, and I have her recipe. I make it every once in a while, and it's delicious. There's a Mediterranean recipe, that's fairly similar to eggplant Parmesan.

If you don't care about the fat content, then you deep fry the ocra in sunflower oil, until it's light brown. If you care about the calories, then put the okra on a cooking sheet, and spray with cooking spray. Bake/Broil in the oven, until it's light brown.

Cover the bottom of a baking dish with diced tomato (canned is fine), lay the cooked okra on top, then cover the top with more diced tomato. Cover with aluminum foil, and bake for one hour, at 375F. Remove from oven, put some sliced Italian cheese on top, cover again, bake for an additional 15 minutes.

Salt/Pepper to taste.

I like fried okra but the best to me is hot pickled okra!😋 I don't like them stewed with tomatoes though because they get all slimy then.😖
