Sounds like youre right - that isnt a normal reaction.

Ive been thru a 3 yr+ study of 'food as medicine' journey.
Long story short, many inflammatory conditions, (and diabetes is one of them), can be 'cured', (or rather kept controlled or in a neutral state), by eating low GI, (glycemic index), foods.
- eat as natural as you can
- avoid processed foods if pos.
- try and stay away from simple carbs like sugar/starches and processed grains like bread, pasta and anything made with flour.
A good bio hack is vinegar or lemon juice: have a table spoon in a glass of water before food.
It affects how you absorb simple carbohydrates:

As we age, shit changes. Stuff we once could tolerate - we no longer can .
Im 55 now and am at a point where nutrition is paramount.
And the most useful piece of advice id want to give younger people is :
Think of food in terms of freshness and nutrition.
Food feeds our microbiome.
Our microbiome is what makes our internal systems work properly.
- it only takes one nutritional deficiency to skew all that sideways amd we start developing inflamation that leads to a WHOLE myriad of internal physical and mental breakdown. (Think things like depression, mental fog, diabetes, heart disease, Alzheimer's - the list is HUGE!).

I do think its difficult to make hard and fast rules as to what foods work for everyone, as everyone is different.
Some swear by carnivore, while others spruke the personal life benefits of being vegetarian.
Some people go high fat intake and it changes their life.
I do think its an individual journey of finding out what works for you personally.
Like for me....bread or any processed grain is a disaster : its like it just tires me out instantly and puts whatever i eat into storage😩 i slump physically and mentally and become useless 😅
Put me on carnivore and i seem to operate like a fine tuned engine with energy to spare🤷♀
