Deciding on breakfast items has been hard.

Before I was vegan, I'd cook up a couple eggs for myself every morning and that was swell. When I stopped being vegan, I decided to start eating cereal again. But cereal is horrifically unhealthy with mountains of sugar, so I changed it to rice cakes and peanut butter.

Rice cakes and peanut butter is decent, but a little bit sad sometimes, and all that peanut butter can be repetitive. Also hard to spread it without getting way too many calories. Eventually, I switched to bagels with fake cream cheese, but my grocery store doesn't always stock whole wheat, and the vegan cream cheese is not very substantive outside of sugar. Also the whole wheat ones taste kinda bad. Sometimes I would try to sub in oatmeal, but most store-bought oatmeal is full of sugar, and the stuff that is sugar-free is way too bitter for me, even with oat milk. In fact, even the low sugar variety still tastes bad to me. I tried a brief foray of oats, but I had the same problem for the most part. Boring, bland, bitter, just not appealing at all, even with fruit.

This is definitely a case of my brain being cooked, at least to some extent. I think part of the problem is that I'm asking myself to change to much too fast. Even eating the full sugar granola with dried fruits would be healthier than the bagels I normally eat. So I'm going to start buying exactly that. (: It's also nice because it'll save me a little bit on time and electricity, since I'm no longer toasting bread. Oh yeah, and it's shelf stable.

Our cereal type rotation is Weetabix-oatmeal-grits. All can be added to to catch 3 or 4 food groups. Omelets likewise can be 3 to 5 food groups. Occasionally have thin pancakes to replace the cereal type rotation, and every once in a while pulverized crisp bacon that goes in the grits or omelet. Just with the above there are near infinite variances. We buy frozen berries, cherries and always have pitted dates handy and chop them up to make things sweeter.

I like porridge with almond milk, cinnamon and raspberries.
Alpro vanilla yoghurt and fruit.
I’m a sucker for peanut butter on toast though.
It’s not a breakfast food but have you ever had peanut butter fried rice? *drools* It’s a slimming world recipe so not as unhealthy as it sounds

You should make overnight oats with massed banana. Don't eat oats that have sugar in them. You mix massed banana into normal oats and chia seeds, then add milk + several types of fruit on top, and set it in the fridge overnight. It's ready to eat in the morning. It's not bitter due to the massed banana, and the swollen chia seeds give it a much better texture. Just remember to add enough milk for the chia seeds to swell up. I don't know any alternative types of milk, but I assume some of them are fairly sweet naturally?

@Nightwings Soy milk is fairly sweet. I don't think I have the bandwidth to stock fresh bananas and make breakfast the night before, but it sounds nice.

@BlueVeins It honestly doesn't take long to prep, you just mash the banana with a fork and mix everything together. If you don't have time to buy the banana fresh, maybe you can buy them frozen? Not sure if that exists, but I know you guys can get other fruit frozen. Maybe you could just buy a bunch and freeze your own? If you switched between avocado toast and overnight oats in the morning, you'd be super healthy haha. In Denmark I used to often eat 2 boiled eggs with salt, together with a piece of ryebread, but I don't think what you guys call ryebread is actually ryebread. If you can find real ryebread though, that's a great breakfast too + an apple.

Avocado toast has been my savior. You may have to find vegan bread.

It doesn't have to be. You can get, or make your own, muesli with no added sweeteners of any kind. Just buy rolled oats, add a little dried fruit, a sliced or shredded apple, some plain yoghurt.

The muesli I buy back home in Norway does have a little added sugar but very little. Here's the ingredients list:

Whole grain oat flakes 42%, whole grain wheat flakes 27%, raisins 7%, whole grain rye flakes 6%, cornflakes [corn, sugar, salt, barley malt, emulsifier (E322)], flaxseed, sunflower seeds, banana chips [banana, coconut oil, sugar] and rice flakes [rice, sugar, salt, barley malt, emulsifier (E322)].

The total sugar content is only 6% and most of that is the natural sugars in the raisins.

It's dirt cheap too, about 3 USD/kg.

I frequently have porridge with a teaspoon of unsweetened cocoa in the mix. Although I usually make mine with full fat milk it does taste equally as good with a plant-based milk.

Parfaits? Tofu scrambles? I live off those two. Protein pancakes and shakes I have every now and then too.

@Nadie Isn't a parfait a desert? IDK, I definitely want something simple and easy for breakfasts. I don't think I can stomach a protein shake in the morning.
@BlueVeins Breakfast foods and desserts are interchangeable in my mind. 😅 I use the unsweetened yogurt and pile on fruit, seeds, and nuts.

@Nadie A true American 😂😂 The yogurt and fruit sounds nice, maybe I'll give that a go. Maybe I'll keep that as a second option to swap in here and there.

You can make the healthiest choice regarding cereal and add stuff in like fruit, plant based milk, nut butters and stuff like that. Hemp seeds too.

@being You're probably just noticing that I've been up to more shit lately. I just (essentially) finished my actuarial education, so I've had more time to improve things in my life. More time to think about how things could be better.

@BlueVeins (obviously they didn't have that sort of stuff in the 50s, but it's at least 30+ years that they adopted what's essentially the standard breakfast here lol)

Either way there's also wholegrains bread options 😌
