As a former restaurant cook we have to make sure certain foods are done to a certain temp, all ground meats must be done to 165F. However if You believe your meal is over cooked, don't be afraid to send it back, that fear is a thing of the past because professional cooks, even at the casuals like IHOP and Denny's, or your local coffee shop/diner, thinks it's unprofessional, we take our cooking seriously and do not want to risk our jobs, because with cameras everywhere now, they know they'll be caught.
