Stewed zucchini for dinner

My Italian grandmother used to call this googootz.
Technically googootz is a slang term for cucuzza, a zucchini-like squash.

Zucchini is underrated. It has a huge amount of potassium in it, which during the harvest times it’s hotter and many people need more due to sweating it out. I bet yours is really good.

Looks tasty, and healthy...too. There doesn't appear to be any meat in there anywhere, so it's especially appealing to me.

2 cans stewed tomatoes, bring to a boil.

Add oregano, black pepper, dehydrated garlic and fresh basil.

Add 2 medium zucchinis sliced, half an onion sliced and a can of mushrooms.

Let simmer 45 min to an hour, depending how you well cooked you like your zucchini.

Serve over spaghetti, egg noodles or rice.

Top with parmesan cheese

@BlueGreenGrey I've heard this too, their diet was mainly veggies and fish/seafood..the Mediterranean diet!!
