Pasta salad is a go to for me, I add a bunch of veggies (some fresh some cooked) and legumes with some sesame seeds and maybe some cashews if I have them. If we have quinoa I add that too. Add some nutritional yeast, bit of mayo and squeeze of lemon. Easy because I do it all in one pan and it takes 20mins tops.
Other favourites are chilli (con veggie for me) with a jacket potato or rice, soup, curry or a dahl (current obsession is butternut squash dahl).

My go to is usually tacos. If that's not your thing, sheet pan chicken can be a quick, easy, healthy (depending on the veggies), and inexpensive (although nothing's inexpensive nowadays).

Lately I am so lazy I buy hot chicken sausages, because they can go into the oven from the freezer and bake up in 30 to 45 minutes without fuss or turning them. They are particularly good with instant mashed potatoes and veg.
OR...meal in a bag...They make all sorts of different salads completely done, with salad dressing, croutons and cheese included. Dole, Fresh Express...and many other companies make them. My particular favorite was Asian salad.

I've been making my own 'healthy pizza' recently with sweet potato wraps, some sort of leafy greens and vegetables, a meat and tomato base. It's 15 minutes in the oven.

Ham a nd cheese and peppers omelette... Great for breakfast or dinner! Also I enjoy a meat sauce over pasta, with cheddar or mozzarella on top. Mmmm

"Lasagna", low fat mince, passata and Mediterranean vegetables layer with pasta sheets and top with fat free yogurt,two eggs, nutmeg and grated cheese. Quicker than making white sauce if Im short of time.
