Pasta salad is a go to for me, I add a bunch of veggies (some fresh some cooked) and legumes with some sesame seeds and maybe some cashews if I have them. If we have quinoa I add that too. Add some nutritional yeast, bit of mayo and squeeze of lemon. Easy because I do it all in one pan and it takes 20mins tops.
Other favourites are chilli (con veggie for me) with a jacket potato or rice, soup, curry or a dahl (current obsession is butternut squash dahl).
