Frittatta. I always have eggs, some kind of vegetable even if it's frozen. Cheese if I'm feeling it. You can put anything in them. Serve with crusty bread. Boom.

I always have shredded cabbage beet and carrot ready to go. It lasts a week. Every few days I make a dressing and something to put on top such as chicken or bacon.

@lka2802 the beets and carrots are a bit high so you could reduce the ratio if you are concerned. When raw all of these have a way lower glycemic index than they do when cooked.
