When you eat a baked potato do you eat the shell with it or just the inside part?

The vitamins are in the skin. Insides, you just get carbs.

I agree with what you are saying but I love mashed potatoes, fried, potatoes and baked potatoes. I love hash browns, potatoe cakes, potato salad, I like gratin potatoes, to be perfectly honest with you there's not many ways that I don't love potatoes.

@Kygirl Totally agree. Just saying that if you want full nutritional value, include the skins -- and I like skins on for fried and even potato salad (when made with little red ones). But the skins are particularly good when baked or roasted, and crispy, as well as healthier, so why discard them?
