What cultural cuisines are your bag and which leave you running for a bag?

I love Thai and the American version of Chinese. My experiences with Indian have mostly been unpleasant. I came to love Mexican. Being half Italian, I've eaten a lot with family and it's not my choice when eating out. Too heavy

I like so many that it's easier to say what I don't like:
fast or processed foods, esp. containing sugar, fat, or white flour.
not too heavy on chilli, wasabi, mustard, ginger or pepper.

I love foodstyles from many cultures, and cultural fusions,
mainly European, Middle-Eastern, Indian, Thai, Chinese, Japanese
plus ingredients from the South Pacific and Australia.
I aim for specific qualities,
wholefoods freshly prepared,
balanced flavours, bright colours, contrasting textures,
lots of vegies, fruit, pulses and grains,
not too much of eggs and cheeses even though I love them,
and no meat, seafood or fowl.
