Any exercise is better than none, but one day a week of walking (while better than no walking) will not build up fitness. You need 3 sessions a week to start.
Years ago, I only did step aerobics twice a week, and weight lifting twice a week, and I did become much fitter, but that’s because the step was vigorous. I became more fit by adding one more session, but usually I do four cardio sessions a week.
