Why is "I'm not into you like that" so hard to say to a girl?

I tried everything from "I appreciate our friendship" to "I have a girlfriend" but none of it works. I admit, I'm not the greatest when it comes to honesty, but I figured it would be easier to lie a little. She actually took it better than I thought, but why can't this be easier?
