I think it depends on how simple or complex your trying to be with this answer.

But trying to go a middle ground...

I think a mega huge factor is people learned to eat for heavy manual labor jobs... which needs high calories and then we got very far away from manual labor jobs and only kept increased the high calories... because high calories foods are cheaper to make, easier to market, and easier to get people addicted to... and therefore more money for those making them.

Like lots of process foods used to be made with a decent oil... not great, but also not horrible.... now almost all cheap food is made with an oil that has a horrible omega 3 to omega 6 ratio, which in large quantities is absolutely horrible for humans... but it's cheap and most convenient and saves the most money.

Also, some loss of impulse control, which is an entire different subject.

So to summarize...

↑ Manual Labor
↑ High Calorie Foods

Followed by
↓ Manual Labor Jobs
↑ Computer Jobs
↑ High Calorie

And cheaper foods equals
↑ Profits
↓ Healthy
