Yum. Having eggs poached in spinach.

@Peaches never tried that. I'm going to check out some recipes to see what's up with it. ❤️

@Subsumedpat will you sprinkle the spinach lightly with a good vinegar?

@Nelladell No I will heat up a pot, in goes a little butter, garlic, fresh spinach and finish it quickly under high heat.

@Subsumedpat Makes me think of how we treated loose leaf lettuce when there was tons of it in the garden. Delicious and easy way to eat a lot. Sometimes when we had run out of butter and had not churned any new, we would use bacon grease instead. Also wonderful.

@MougyWolf You must try it cooked a litle (or a lot, your choice) with a touch of vinegar.
