A few things that you said in your post, I think you need to say to him.

I don't want to lead you on. I'm just not feeling a spark. And I am telling you this out of respect because I don't want to ghost you because I've been ghosted myself and it isn't nice.

I know it's not an easy conversation to have, but it is the right one.

Tell him the truth. I typically will say something like - "I'm sorry but I don't feel a romantic connection with you. I wish you the best". And then just end it at that, no need to give a bunch of reasons why you're not feeling it. The sooner you have that conversation the better, so he's not continuing to think all is good.

Good for you for not just walking away. That's bad behavior and bad mojo.
I might go with something like, "I had a really nice time with you but my life is getting a little crazy right now I'm just not in the right place to date." I just think it's better to put it off on something else as opposed to "I'm not feeling the vibe with you." Good luck.

After two dates? You're not breaking with him, you never dated him. A "You're a nice guy. but this is not working out for me, have a wonderful Christmas and a happy new year" would more than suffice.

Tell him exactly what you've just said there - that you feel no spark and can't see it being a long term relationship so you don't want him to believe it might be.
