Haha lah y3tiha sa7a. Y’know bastilla is one of those tricky & intimidating dishes in our cuisine tbh. This was my first time and I feel like a proper Moroccan lady now. Spices were good but overall turned out a bit dry :/ lol ghir chkil ja zwin…rah 3adi l7aya tjarob 🌚 @ASLAN

@Vivaci Thanks 💜 It's more or less a filo pie filled with shredded spiced chicken, crushed fried almonds and caramelized onions + eggs for texture. We add sugar to it so it's one of a kind. You should totally try it 😜
@SW-User Well yes, you're right about those but you did mention that filo would do and wasn't the orange blossom water optional? :-)

@ninalanyon Yeah. Those optional ingredients are nice touches that take the dish to another level ~ but again you can make a simple, standard version with the basics.
@SW-User I had it in Marrakech in a restaurant, I wouldn’t say it was too sweet. The thing that surprised me was the very light texture of it, not a bit heavy even with meat in it. But then again there are other foods with a surprisingly light texture in Morocco…couscous is very fluffy.

@cherokeepatti Indeed. A good bastilla has to be crispy on the outside and fluffy/juicy on the inside. The filling must be what we call "m3lka" which roughly means has a nice bite to it. My mom makes it great. Mine turned out a bit too crunchy but well life's all about learning 😅
I think next time I'll have the almond layer on top with the onion + egg one at the bottom because the almonds are already fried and with the heat coming from down they get even more roasted.
Also, I'll cook it for a shorter time in the oven + mix the shredded chicken with more onion mixture before layering each separately.

@SW-User Not usually. Bastilla is often served in big occasions but I felt like making it.
@nightjourney I enjoy cooking in general and only tried after grasping all the tips to make a decent one. I kinda left it cook in the oven too long. It was a bit dry.
