That’s a nice casserole dish ..

@SW-User it’s a pastry not a casserole. I had it one time in Morocco and it tasted like a dessert although it had chicken and eggs in the filling and is considered a main dish.

@SW-User It’s very tasty

@cherokeepatti Some people make it too sweet but I like it balanced. I prefer to taste the savory part as much as the sweet part.

@SW-User I had it in Marrakech in a restaurant, I wouldn’t say it was too sweet. The thing that surprised me was the very light texture of it, not a bit heavy even with meat in it. But then again there are other foods with a surprisingly light texture in Morocco…couscous is very fluffy.

@cherokeepatti Indeed. A good bastilla has to be crispy on the outside and fluffy/juicy on the inside. The filling must be what we call "m3lka" which roughly means has a nice bite to it.
My mom makes it great. Mine turned out a bit too crunchy but well life's all about learning 😅
I think next time I'll have the almond layer on top with the onion + egg one at the bottom because the almonds are already fried and with the heat coming from down they get even more roasted.
Also, I'll cook it for a shorter time in the oven + mix the shredded chicken with more onion mixture before layering each separately.
