Evil is temporal. Good is infinite. Of course they are human constructs because humans are the only mammals capable of abstract reasoning. We are created in the image of our creator. All normal healthy people know when they have done wrong. The elect of God are convicted and feel guilt and shame that leads them to repentance. The serpent seed doesn't care what they have done, and often retreat to subjectivity or moral relativism.

What you are overlooking is why they did what they did.
The higher-up nazis did it out of hatred.
The camp guards were notorious for their treatment of the prisoners; many of them enjoyed tormenting them.
And motivations such as these are not evil?
If you don't think so, we have a fundamental disagreement on the definition of the word.
Reminds me of a physics lecture about time I heard once.
"Time is an emergent phenomenon; its passage is an illusion."
