For a language I would choose Mandarin Chinese because absorbing that language means absorbing a whole ancient culture as well as gaining the ability to speak to a billion people.

For an instrument, I'd choose to play classical guitar like Andre Segovia.

I can play a handful of guitar chords, from back in my teens. I'm pretty good with Italian and did start learning Japanese around 20 years ago. Never got far!
