Maybe start with one specific dish, about which you can say something constructive. "Say, I bet this would be better if...." (You used less oil, or whatever.) And as others have said, you could try being in the kitchen with her and make it a joint effort.

Maybe you guys can cook together and you can show her some tips and tricks to improve her cooking without directly having to say anything that might hurt her.
