I need cooking advice please [I Need Advice]

I'm hoping you guys can help me out. I'm trying to train myself to meal prep more often and eat out less and its starting to become a bad habit again. Problem is I'm a terrible cook and I don't have much time between work and sleep.

I'm just looking for stupid simple meal ideas like meatloaf or stir fry or whatever, can ya help a guy out?
Buy a rice cooker.

But sweet soy sauce.
But sesame oil.
Buy garlic powder.
But pepper.
Cook rice.
Scramble some eggs.
Put rice on scramble eggs.

Put some sweet soy sauce on it.
As well as pepper and garlic powder.
And a small drop of sesame oil.

@JestAJester with a rice cooker you can make so many variations of rice. I made a rice dish with rice, onions, garlic, cooked chicken, green beans & green dill the other night. But you can add what you like.

One of my favorite simple recipes is egg soft tacos for breakfast or for lunch. You can use corn or wheat tortillas. Make a couple scrambled eggs & when they are cooked add some cheese and take off the burner and cover. While the cheese is melting heat up the tortillas. Put eggs on the tortillas, add salsa *I like shredded onions and Ranch dressing with the salsa but put whatever you like on it*. this is one of the cheapest, easiest, tastiest and quick meals you can make and you can make them a lot cheaper than what breakfast burritos cost. If you want breakfast burritos cook some sausage and add to it. Also beef or chicken fajitas are another quick and simple meal to make.

@cherokeepatti since you're the most eager to help, got any advice for fish? i use to grill it up, toss in rice and soy sauce but man oh man im so sick of that but still love fish over chicken and beef
cherokeepatti · 61-69, F
@JestAJester You can bread it and fry it. I like to use coriander spice with salt and pepper in the flour to coat it with. Coriander is the seeds from the cilantro plant and it adds a wonderful lemony flavor to the fish. You can also bake it with coriander spice, salt, pepper and a bit of ginger, & olive oil. Really good that way. If you don’t have coriander to bake it then use lemon juice instead.
Congrats on the lifestyle change! Do you have a slow cooker? I use mine all the time. I work nights so I just put everything and let it cook while I sleep. I always end up with plenty of leftovers too.

@cherokeepatti making these lifestyle changes is so freaking hard. especially when you got cravings. Trying to give up eating out and trying to give up soda which is so damn difficult
@cherokeepatti I order mine from penzeys spices
cherokeepatti · 61-69, F
@JestAJester Yes it is difficult in the beginning. It’s a gradual process. Giving up soda drinks is one of the healthiest things you can do. I like to drink ice tea and some types of herb teas instead of soda. Anything with corn syrup can feed intestinal cancer and causes a host of other health problems. I have learned to cook different types of dishes I used to have in restaurants, partly due to the price of restaurant food or getting a bad meal at a restaurant. You can save a lot of money cooking at home. Stir-fries are pretty easy to make if you have the ingredients. Fried rice is also easy and you can add whatever meat you have cooked to it. I learned to make homemade versions of soup like cream of mushroom soup or cream of broccoli soup in order to avoid mono sodium glutamate, they taste so much better. If I had a bit of canned soup after a few years of avoiding it then it tasted too nasty compared to homemade. I also learned to make homemade pizza, there are so many ways of making pizza crust. The easiest recipe for me is the Greek-yogurt Plus Self-rising pizza crust (you can substitute sour cream which is less expensive instead of buying Greek yogurt). This recipe is one of my favorite ones now and I can also make a gluten-free version… the recipe is on Pinterest and it’s for a thin-crust pizza.

Make a Pinterest account and do searches for recipes. You can save your recipes to your account. It’s one of my favorite websites and not just for recipes. you can search for whatever you want.

@cherokeepatti actually a damn good idea, lots of cool stuff there. googling recipes gets me nowhere. They require all this seasoning and special instructions. like jeez i just wanna stick it in the oven or on a skillet and not have to think too hard
Grill some chicken on your off day. You can use the chicken for caesar salads, quesadillas, tacos and easy pasta dishes
JestAJester · 31-35, M
@Jimthere4fun sometimes Ill boil it and use it for chicken salad for sandwhiches but ive gotten bored of it lol
JestAJester · 31-35, M
@Jimthere4fun but quesadillas sound good
@JestAJester try baking the chicken, tastes a lot better than boiled. Also flatten any chicken breasts so they cook evenly

here's a super easy recipe

1/2 onion diced
1 tomato diced
2-3 zuccini chopped up

Throw these in a frying pan that has a lid. Don't add any oil. Cook on medium-low until the zucchini is soft - 10-15 mins.

You can add cheese at this point if you want.
JestAJester · 31-35, M
@Nayla sounds more like a snack to me, I work overnights so I need something else in there to last me the night
Nayla · 51-55, F
@JestAJester you could add anything you want to it. Sausage, chicken, tofu, anything.

I had no idea how to cook when I moved out. My husband taught me a few things he knew but the rest was up to me to figure out on my own. You can follow recipes but you can always improvise them to suit your own taste. I have so many recipes in my head, not on paper. I'll think about what else I can share that you might be interested in

For a single working person it's usually best to reserve a weekend day and cook for a week.

Had this problem myself. After a ten hour day working you don't feel like cooking. And if you have two or more jobs it's even worse.
JestAJester · 31-35, M
@DeWayfarer yup definately have that issue. I was doing overtime before I said 'enough' but even still working overnights is zapping my energy
DeWayfarer · 61-69, M
@JestAJester freezing what you have made is your friend! 😊

So load up on containers that are both freezable and microwavable.

Quart size is the best for one meal.

Try easy recipes from youtube first.

There's always a first to everything and if you fail at it don't lose hope. Just learn to tweak the recipe the next time.

Homemade chicken nuggets:

cut up boneless/skinless chicken breasts. Dip them in breadcrumbs and bake away. I would bake at 400 for 20 min

I’ve found a lot of good stuff on allrecipies.com.
You can even search different recipes with specific ingredients. :)
