I Need a Damn Job

Is it okay to say "I don't know" but in a nice way in a job interview question if you really don't know or really don't have experience regarding to the question?

Absolutely. And unless it’s something truly foundational, a good interviewer will never hold it against you.

But you should also have a strategy for how to deal with coming up to a knowledge gap, and be ready to describe how you’d go about figuring it out.

Saying, "I don't know" shows a lot more integrity than trying to fake it and getting caught in the act.
People with experience can usually tell when they're being lied to by people without.
You really need to try and make something up at least. They want answers for everything.
