My go too has always been the fallout series.. elderscrolls.. I mod them and make them endlessly replayable
With notable mentions bioshock series and mass effect series
One day I want time to play the witcher series.. also started red dead redemption 2 quite the cinematic adventure so far. Writing like a movie would be. But there so many games really.
Death stranding seems like an interesting game.. maybe not for everyone though.

@Mandz also look into the subnautica series.. not exactly rpg.. but really great reviews and I've watched a lot of people play then and looks like a lot of fun.
