Imitation crab

@deadgerbil I think you’re right - I just looked up crab and this is exactly it. Thank you 😌

If it is from a Korean restaurant, it could be some kimchi although kimchi is normally served as side dish. If it tastes spicy and fermented, then it is likely kimchi.

@NativePortlander1970 I love that stuff but is better eaten when you are all by yourself. The smell of it gets out of every single pore of your body and may be a nuisance to most people not familiar with kimchi.
@Gibbon I Love coleslaw and caramelized sauerkraut and onions on brats, not together of course, but reheating kimchi in employee lunch rooms should be banned.
@Stephie That manager smelled like the walking dead.

It looks like bean sprouts and a piece of bacon. You see this on a lot of Japanese and Chinese dishes as well. The lonely white piece across the top of the dish could be squid.
That looks to be chopped lettuce that has been fermented and spiced. Kimchi. One of the 10 superfoods of the DPRK.

Is it definitely part of the dish? Does it have the ingredients used on the menu?

Trout maybe. Salmon is that color too but this looks more like trout.

I'm really not sure if I would just guess I would say it could possibly be a very thin slice of bacon or it could be a thin slice of ginger
