It;s okay to substitute.

Family favorite: pea salad. peas, chopped celery, teeny cubes of cheese, mayo.
Hubby asked for some. I didn't have peas, so used green beans. Celery all gone, so used chopped cabbage. Not enough cheese, so boiled eggs. No mayo in sight, but had olive oil and salt and pepper.
Hubby, as usual, didn't complain. Probably couldn't even tell the difference.

I have made bean salad that was really good, a can of red kidney beans, chopped onion, celery, tomato, pickle relish, parsley and Italian dressing…but you can change it up to suit your taste.

@cherokeepatti That sounds realy good. I guess I would have to sub a little here, too. With my current supplies it would contain chili beans, garlic, chopped cabbage, tomato paste, chopped pickle, a bit of kale and olive oil with salt and pepper. Probably couldn't tell the difference, don't you think?

@Nelladell I’d have to try it to see. I know you can make marinated chopped veggie salads and change them up to suit your tastes and I’ve never really had a bad one.
