It;s okay to substitute.

Family favorite: pea salad. peas, chopped celery, teeny cubes of cheese, mayo.
Hubby asked for some. I didn't have peas, so used green beans. Celery all gone, so used chopped cabbage. Not enough cheese, so boiled eggs. No mayo in sight, but had olive oil and salt and pepper.
Hubby, as usual, didn't complain. Probably couldn't even tell the difference.

I actually would prefer cabbage to celery and olive oil to mayo (The latter preference probably reflects my Italian heritage!)

I have made bean salad that was really good, a can of red kidney beans, chopped onion, celery, tomato, pickle relish, parsley and Italian dressing…but you can change it up to suit your taste.

Doesn't sound bad at all. I don't like peas but love green beans. Love cabbage and the rest you put into your salad.
Sign of a good cook...make due with what you have.

@ShadowWorker Well, I think that's true. But I did take notce of the fact that the next time Hubby got a yen for pea salad, he first asked if we had any peas and cheese.
😂😂 That sounds like my mother. It may be edible. It may even be good. But it's not pea salad.

@Mamapolo2016 Somewhere on the low side between edible and good.

My lovely mother-in-law prolly had something to do with Hubby's quiet acceptance. When Hubby asked her at supper table, "What's that?" her answer was. "It's gut-filling. Eat it."
