Bread is the staff of life for many.

My guess is that it was relatively stable and portable which made nomadic life and eventually colonization easier.

Because it's made from grain grasses, which have a very long shelf life and is easily transportable. Much like beer, which is also sacred.

During famines bread and little else may be keeping people alive.

And also because any idiot can make it. Maybe not good bread, but bread. I made biscuits 3 days ago and forgot the baking powder. They turned into hockey pucks but would still keep me alive if they had to
