I never knew you could cut someone's head off with a knife. I thought it had to be something like a axe or sword and so on.

you'll note the lack of the adverb (or perhaps adjective, depending on how it's worded) 'cleanly'. persistence helps. axes and swords are more to make it easier on the person being killed, make it quicker.
