What’s the best thing you make with leftover turkey?

I used to chop it up, steam it a bit to soften it up and then add barbecue sauce. Makes great sandwiches, and smoked turkey is even better this way.

My mom used to make hot open-faced turkey sandwiches, with the leftover turkey and gravy.

That was a better time.

Always good! With mashed potatoes, bread and gravy.

For some reason or other, the stuffing is allways gone by the end of Thanksgiving day. Then comes the hot open-face sandwiches on day two.
