It depends on the context. I pronounce the semi-soft candy with two syllables. The liquid sauce is with three.

Three. I work with someone called Carmel and it would really confuse her if I pronounced the two words the same.
2. I pronounce it like "car- mall" to me saying "care-a-mal" just sounds weird and wrong.
