Which do you think is more of an issue; thinking too much or thinking too little?

They can actually be one and the same. Thinking too much without nuance can also be called thinking too little. Perhaps it isn't the quantity of thinking, as the quality of thinking. You can think of something alot but if it's in a 1 dimensional way well, it will not help. You can think of something not very much, but if you're aware of the richness of the object, problem, topic, etc, well atleast that's a start, and you can take it up again later to develop it.

And perhaps how I've treated this question is an example. I've gone beyond the dichotomy the question has posed, to think outside the box.
