If the Earth's magnetism were to be reversed, as scientists claim has happened previously and could happen again, would everything we know and understand be reversed? Would we see ourselves come, or go?

It would make navigation by magnetic compass difficult but the primary concern for us would be what if any effect it has on protecting us from harmful solar radiation.

Although the reversals are rapid geologically, I don't think they would take place fast enough for any given generation to notice. The Magnetic Poles do move around enough for map users to need take the drift into account, but the extent of the wandering (a rotation?) is not large.
Great question!

Will birds then start flying north in the winter and south in the summer? And if North becomes South, will left then change to right, will East become West?

Pole reversals are associated with things like ice ages apparently. I doubt it would sneak up without plenty of warning that human life as we know it was about to be scrubbed out.

Would the dead come back as they were.

No, there’d be an uptick of skin cancer and some communication disruption but life would go one pretty normally
...no.

Magnetism isn't responsible for clocks...
