How often do you think of unsolved murder cases?

Occasionally. There's been a handful of more or less local ones that cross my mind from time to time.

Forty something years ago a young girl went missing in the town just north of here. Years later I got to know some of her family. She was never found and in spite of rumors of her being spotted all over the country it's generally believed someone local killed her. Now all the suspects are dead and occasionally a rumor surfaces about what happened and where she may have been buried.

Roughly 1987 a college student was found dead more or less across the street from where I worked at the time. There was a rumor that "when the truth came out everyone would be shocked". The truth never came out. A man was convicted, apparently on nothing more than the testimony of a couple of "witnesses" that were inmates in the county jail. After about 10 years 60 Minutes (or 48 Hours??) got involved and the man who was convicted was set free and sued the state for a large sum of money. I always wondered if the local law was really that incompetent, if they just had it in for that man for other reasons and he was a convenient target, or if they needed to solve the crime quickly in order to cover up for someone else. After 10 years they couldn't seem to agree on any of the details and the real killer was never found.

Early 90's (as best as I can remember) a twenty something young guy who was related to me in a round about way was shot. His "friends" drove him to the local hospital after they hosed his car out and possibly washed the body or changed his clothes. Sheriff's department played around with the case a few weeks before turning it over to the state investigators who couldn't find any evidence. Clearly some of the "friends" knew something but no one ever talked. Someone new ran for sheriff on the slogan of "Remember (guy's name)" and won but they never solved the crime either. One of the "friends" was from a family that had been mixed up in more than one death and I'm almost certain there was at least one other unsolved murder they were present for.. As my ex BIL used to say "people just have a way of dropping dead around those boys".
