Should I be out cycling at 2 in the morning?

Other than the safety issue. Why not ?
If you live in a 'free country' you should be able to !
I sometimes take my dog for a walk at three in the morning if neither of us can sleep !
Once in a while we might get stopped by a passing policeman. Just because we're an unusual sight at that time of day.

@nirvsemp Well i've learned to time it pretty well.
Go at a certain time. Take a certain route. Maybe pick up a paper; a pint of milk and fresh bread from the bakery on the way home !

I remember running in snowfall by moonlight. Would not have missed it for the world.

sure snow added something magical. I prefer sunrise as a time to walk. I have seen some fantastic sunrises. Few people walk at that time. I have several bicycles. Wonderful machines. One I have had 30+ years now!
