Is Dark matter and Dark energy the Science way of saying God's energy?

No it's science way of saying what we are observing in the universe does not add up to what we should be observing if the standard accepted model was true.. Hey lets say there is this stuff called dark matter that cannot be observed so we can say the accepted model is still good... Problem solved..

It's science way of.saying this thing we know nothing about is the glue holding everything together so in a sense it is God because it's the key holding so many theories together and we can't prove or test it

No. Such terms are just placeholders for the discrepancy between what our theories predict and what observation tells us. It's just science doing its job: look at the world, construct a theory that describes it, observe some more, notice that the theory is not sufficient to explain the observations, give the discrepancy a provisional name, start thinking about how to extend or replace the theory.

Forces, Fields, particles, and radiation (excited photons or other particles) are pretty well defined now but they keep finding stuff. Astronomers and cosmologists are finding evidence of stuff like quantum foam (whatever that is??). There are likely new elements/stable isotopes in other parts of the Galaxy that have interesting properties.

@CopperCicada Not that God would be associated with darkness but God has created day as well as night. The things which human could see were universe and matter and unexplained phenomena of gravitation without mass was termed as dark matter having a mass.
