Why do theists describe the atheist position as "nothing happened to nothing and created everything" as if nothing should be the default position? [Spirituality & Religion]

What makes you assume that nothing is the default state which something must replace? Sure, the bible tells you that in the beginning there was nothing. But what does a bible passage have to do with what atheists believe?

In order for there to be a "something" there has to be a "nothing" to contrast it to.

Says who? Has anyone ever observed nothing? What evidence do you have that nothing is even possible?

You've backed up the assertion that nothing must be the default state by repeating that nothing must be there before something
I never indicated if one state precludes the other.

I am merely dissecting the ideas. The concept of something suggests there is also a concept of nothing, in juxtaposition.

It may suggest given our limited ability to conceptualize the universe but there is no reason to assume that it is factual.
