I think most people zone out and go into autopilot. Sometimes I probably look like I'm annoyed that I'm waiting but I'm actually easy going af. People get anticipation anxiety/rehearse what they're gonna say etc.

My advice from working retail and hospitality before, just assume the best in people and they'll probably give the same back.
