I think the obsession would be a turn on in the beginning but obsession is based around lust, it's you creating an idealized version of a person that doesn't exist. So when the person starts being sick, moody, goes through life events or is no longer serving the needs of the one obsessed, the obsessive one would seek to get rid of them.
That happens with stalking cases even, they lash out at their victims for not maintaining an image the obsessed person thought they were. That's why Joe eventually gets rid of his victims because they started being more human and not like the version that Joe created so when Joe realizes this, he gets rid of his victims. That's how every season of You eventually ends.
Of course in the show, Joe is all poetic and thinks of other reasons to justify what he does in his own mind but that's what's makes it all so sick, it's basically delusional disorder.

With that said, I've seen all seasons of You, it's a decent show and part of me likes Joe. I really starting rooting for him lol and wanted him to find his perfect lover. For me personally, I'm kind of a masochist and Joe would be perfect, especially when he starts delving into that dark bdsm world towards the final season when the female he's with allows him total control.
But at the same time, no matter how hot that "sounds," it's not how it works in reality because in reality, Joe would get rid of you once you start being inconvenient and once he fixates on someone else, that happened in the middle of a season when he liked his new neighbor and plotted to kill his wife.
So my answer is, in sort of fantasy version this would be hot but in real life it's not doable as those types of people are delusional (literally and not figuratively.)
You would always get hurt with someone like that. They could be in a relationship for more than a few years but it would be a matter of time before you find yourself murdered.
