Why if the country is Great Britain, and the people are British, do they all seem to speak English?

The country was known as England before its moniker 'Great Britain' was used.

William Shakespeare invented 14,000 English words, so they say. only 8,000 of them still in use.

Plus English is not their official language. They never chose to make it official.
