Reubens. I love them but finding a good one is a challenge. I don't want an okay one. I want a GOOD one.
@Sevendays Pastrami or corned beef? I prefer the pastrami myself.
@Musicman The best real pastrami and corned beef is made with brisket, too many places try to pass them off top round, which is an inferior cut.

@Musicman Indeed, I am a brisket snob, You can slow amoke it and it only gets more tender, top round being a leaner cut doesn't have enough marbeling and gets tough as shoe leather, hence why Katz's in New Yok keeps theirs in an aus jus to keep it from drying out, which doesn't need to be done with brisket.
@NativePortlander1970 We have a place here called Darrell's that has good brisket.
