Monks have religious beliefs, hermits don't necessarily do.

I sort of consider myself closer to a hermit. Though not exactly one. I certainly don't interact with a lot of people in real life. Unlike on the internet.

Monks abide by a monastic rule as part of a hierarchical system, hermits do their own thing.

There is no religious affiliation by being a hermit.

Monks are ascetics.

Hermits are someone who leads a solitary life.

One of my wife's former lovers is a hermit now, and he would make a terrible monk.

Hermits are cranky but monks are silent and make beer
