What Makes Steel-Cut Oatmeal So Special?

If it's so tough it has to be cut with steel why eat it? Asking for a friend.

Just advertising waffle. Grain has been milled with steel rollers for a very long time now. If anything, it's genuinely stone-ground oats and flour that have the sales cache.

There's no difference in husk hardness..It still has to be cut one way or another, then cooked to be edible.
