How long can I make a phone last if I only have 1.14 GB of storage on it?

I don't plan to download many more apps (definitely not any big gaming apps), I don't think I'll have to download any pdf's, and as soon as I see my photo gallery building up, I'll transfer the photos to my Google drive instead.
EDIT: I just realized there was an app I can live without, so now I have 1.22 GB of REMAINING space on my phone.

That is very limiting. My last two phones have been 64gb. I think I could manage with 32gb but not 16gb that just wouldn't work.
Considering the fact that most phones need at least 2-4 GB just to operate you're correct that 16 GB is too small. Especially if you use apps. That's why most companies are making 16 GB default starting storage obsolete.

As a matter of fact, my phone three back was the 32gb Galaxy S3 so it's really been about 5 years since I had a 16 GB phone and it had a microSD slot with a 32gb chip in it.
