Well if I had already Married her and I didn’t ask if she would want me to stop eating pork before hand then I’d stop. Can’t complain if I never brought it up

Kind of important to discuss that before you get married. Islam is more than just not eating pork. What if they wanted you to pray five times a day, fast during Ramadan, and make the pilgrimage to Mecca?

I wouldn't tell her when I eat it but one would really just be aware of those things before marrying a Muslim if they're informed enough.
