How do I manage to strike up a meaningful conversation with her?

She works at a restaurant I frequent before work. I like her. We get along. But she's always busy and all we can do is make passing jokes with each other. Maybe converse for 60 seconds and be on our way. I don't even know if she's single or not, which is the main thing I want to know.
