How do you know if you’re being a mature adult about a situation? Or when you’re just being taken advantage of?

Yes, easily, especially if the relationship started out as a friendship.
It helps if you have similar interests and values.
It doesn't help to be too close. That could keep other prospective partners away, or trigger issues of jealousy or paranoia with a new partner.
It needs to be clear that the former sexual attraction is dead as a dodo.
