So, I found someone I really like and we’ve taken a couple steps towards a relationship but she is constantly hot and cold towards me and I’ve noticed snaps from her ex two days in a row.

Please remember that she is young, and when we are young and insecure we might self sabotage relationships even when we love someone. If you care about her be patient and tell her that you care but are concerns about her behaviors of hot and cold.
And you are not even in a relationship with her so there might be competition, and try not to be jealous or possessive!
