I don't understand why most men don't want to start a family .

They - sorry - we - realise being a parent is a tremendous social, emotional and financial responsibility, complication and burden. If we know we cannot cope with any of those, then we know we will not good parents.

On the other hand I have never understood why people - both sexes - want to have children, beyond the obvious, natural, biological drive to reproduce.

My text-book on human biology introduces its chapter on reproduction with the statement that "biologically, our purpose in life is to reproduce". Rather a bleak way of looking at human life because it ignores everything else in that life, and leads to the obvious but very uncomfortable question about the point of life in general.
