How do I politely ask my girlfriend to become my legal guardian

I'm 35 my girlfriend is 42 I want her to take me in for legal guardianship because my dad is getting older I want him to slow down because he needs to take care of my stepmom more but I think my girlfriend would be a good candidate to become my legal guardian.
I am worried about my dad's physical health and mental health.

I wouldn't do that.

If you legitimately need help with managing your finances, then hire a professional service rather than asking someone who you know personally to do it.

There's too many ways that this could go wrong when you ask family and friends to manage your finances for you.
